1 pound  ground beef
1 tsp cumin
1 Tbls chili powder 
1/4 tsp  garlic powder
1/4 tsp  red pepper
1 tsp salt
1 tsp black pepper
1 can (16oz) diced tomatoes or tomatoes with green chilies
12 corn tortillas
1 can kidney beans, drained & rinsed
2 cups small cottage cheese
1 cup Monterey Jack Cheese with peppers
1 egg
shredded lettuce
shredded cheddar cheese
chopped tomatoes
chopped onions
sliced black olives
  salsa
  sour cream

 

  1. Preheat oven 350 degrees.
  2. In a large skillet over medium-high heat, cook ground beef until no longer pink. Using your Silpoura clip on strainer spout drain off grease into a disposal can.
  3. Add cumin, chili powder, garlic powder, red pepper, salt & pepper, tomatoes and beans. Heat thru.
  4. Spray a 9x13 baking dish with cooking spray. Cover bottom and sides with tortillas.
    Pour beef mixture over tortillas;
  5. Place a layer of tortillas over meat mixture and set aside.
  6. Combine cottage cheese, Monterey Jack cheese and egg, pour over tortillas.
  7. Bake for 30 minutes.
  8. Remove from over and sprinkle lettuce, cheese, onions, tomatoes and black olives over top.
  9. Serve with salsa and sour cream.
