1 6oz ready crust graham pie crust
1 400g tin of sweetened condensed milk
1/2 cup fresh lemon juice
1 rind from a lemon
3 lightly beaten egg yolks
3 egg whites
1/2 cup sugar

 

  1. Preheat oven 350F
  2. Combine condensed milk, lemon juice, rind, and egg yolks (no green lemons)
  3. Using Silpoura pour mixture into pie crust. Set aside
  4. Beat egg whites (best in metal or glass bowl) until stiff.
  5. Gradually add sugar
  6. Spoon onto filling, use a fork to create peaks
  7. Bake until golden, about 15 minutes
  8. Let cool

Yield: 12 servings
