Silpoura Clip On Spout Banana Muffins


3 cups all-purpose flour
1 tsp baking soda
1 tsp salt
1/2 tsp baking powder
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
2 cups sugar
1 cup vegetable oil
3 large eggs
1 Tbl vanilla extract
4 ripe mashed bananas

 

  1. Line 24 muffin cups with paper liners. Preheat oven 325F
  2. Whisk flour, baking soda, salt, baking powder, cinnamon & nutmeg in med bowl.
  3. Beat sugar, oil, eggs & vanilla in large bowl to blend.
  4. Stir in bananas.
  5. Add dry ingredients and stir until just blended.
  6. Use the Silpoura to pour batter into muffin cups.
  7. Bake on middle rack until tops are golden brown and toothpick inserted into center comes out clean. Cook for about 25 minutes.
  8. Transfer muffins to a rack and cool slightly.
  9. Maybe iced with either butter cream frosting or cream cheese frosting.

Yield: 18-24 servings
